Snails with herbs

This delicious dish was created for the Christmas Meeting of our friends. Try to make it by your self and your will be pleasantly surprised.

Ingredients for Snails with herbs - Serves 4 persons:

  • 40 Snails;
  • Parsley;
  • Rosemary;
  • Chives;
  • Garlic;
  • Fresh mint;
  • 1 stalk of celery;
  • Oil;
  • Vinegar;
  • Salt and pepper.


Snails with herbs preparing:

First of all purge the snails by putting them in a container with some soaked and squeezed breadcrumbs, and add some vine leaf.

Let them stand for a couple of days, then put them in salted water with strong vinegar and wash them until the foam is exist, then put them in a deep pot and cover them with water.

Keep them on a low heat until they come out of the shell. After that raise the heat and makes cook for another half hour. 
Arrange snails in a pan with olive oil, sliced celery, a little rosemary, parsley, mint, a few cloves of garlic and chopped onion.

Add the peeled and dried snails, and make them cook for a couple of hours with the lid and on a very low fire.
